SOILS: Argilo-limestone and pebbles
VITICULTURE: Manual harvest using small crates. First checking/sorting of the grapes on the vine. Harvest stored in a cold room. De-stemming and manual sorting table for second check.
WinemakingIn temperature-controlled stainless steel tanks. Maceration from 14 to 21 days, then racking and addition of the best juice from the press. Once malolactic fermentation is completed, the wine is filtered. Maturation in temperature-controlled stainless steel tanks.
COLOUR: Rich purple.
NOSE: Plums; mulberries; myrtle; violets.
PALATE: Blackcurrants; blackberry leaf; white pepper; garrigue.
Food matchesBraised beef, carrots, sage and thyme; farmhouse cottage pie with petit-pois; seared tuna and garlic fries.
